В книге я рассказала, зачем нужна вторичная ферментация. И почему нежелательно класть разные ингредиенты прямо в раствор к зооглеям. Будь это чайные грибы (чайный, джун ти, венский, тибетский, египетский и т. д.) или водный кефир на основе морского риса. Простыми словами объяснила, что же такое двойная ферментация и как она протекает. Собрала доволь о внушительный список различных ингредиентов, которые можно использовать для вторичной ферментации.
